Paul Hletko established FEW Spirits in 2011. The distillery is situated in Evanston, Illinois, which is outside of Chicago. The name is derived from the initials of Frances Elizabeth Willard, a historical person who established the Woman's Christian Temperance Union in Evanston. Whiskey may be made using just three components: water, barley or other grains, and yeast. To start the fermentation process, all whiskeys require a modest amount of malted barley, albeit the type of grain used varies depending on the type of whiskey being manufactured.
