Dr Trouble utilize a mix of African Birds Eye and the well-known Cayenne Pepper, the best domestically farmed chile. They collect lemons from organic, naturally grown trees in Zimbabwe's communal lands; most homesteads have lemon trees. The chili is hot-smoked over expensive English Oak chips, then allowed to cool and smoke again, giving the sauce its distinctive, sweet smoky undertones that have made it so well-liked. They purchase their lemons and chillies from nearby rural areas at Dr Trouble. Their African Birds Eye peppers and lemons are organic by nature. Early missionaries brought lemons to the area in the late 1700s, but it was the Arab and Portuguese traders from nearby Mozambique who drove into the interior in search of ivory who brought chillies there a little earlier, in the late 1600s and early 1700s. Every family in a hamlet normally has a few lemon trees, and the lemons are used for cleaning and as treatments for the common cold and flu.
