William Carter and Peter Wilkins established The Newfoundland Distillery in 2016 with the goal of showcasing the terroir of Newfoundland and producing distinctive spirits utilizing local ingredients. For more than 20 years in Ottawa, Cordon Bleu-trained chef William Carter prepared meals for a variety of people, including three past them presidents. They started distilling in order to maintain the seasonal freshness of the native botanicals and became an expert in regionalized Canadian cuisine. Peter Wilkins is an internationally exhibited artist who traveled the world researching various cultural perspectives on alcohol for British TV. All of Newfoundland & Labrador, as well as Nova Scotia, Ontario, Quebec, and Alberta, carry their alcoholic beverages.
