Maurizio is an author and former software engineer who has been making sourdough bread in Albuquerque, New Mexico, for more than ten years. In 2013, they started The Perfect Loaf to share the enthusiasm and knowledge they had gained from making sourdough bread at home. In the Italian household where they grew up, cooking by hand was a way of life. They grew up with a love of homemade, slow food that requires time to prepare, whether it was the pizza and pasta their dad made at his restaurant or the gnocchi and risotto their mom and grandmother made at home.
