About Honeydaes
Honeydaes is an extremely rare sweet potato (imo) shochu. "Genji Imo" is made with traditional ingredients (Traditional Rare Sweet Potato). In the case of their koji rice, the manufacturer resurrected a variety of rice (Shiratama-mai) that had not been cultivated in Japan for more than 160 years. This particular rice, along with the superb, self-grown sweet potatoes (Genji Imo), creates a fragrant, strong shochu with a lengthy finish, but the subtle umami taste comes from black koji. The stylish black bottle comes with a banderol and a delicate washi paper label. Nishi Shuzo's famed vintage Honeydaes from Kagoshima, Japan. The one shochu that is the stand for superb flavor for the whole Houzan series. White malt was used to ferment specially chosen potatoes. The delicate sweet scent and rice flavor allow you to get a good impression of the potatoes.
