Honeydaes is an extremely rare sweet potato (imo) shochu. "Genji Imo" is made with traditional ingredients (Traditional Rare Sweet Potato). In the case of their koji rice, the manufacturer resurrected a variety of rice (Shiratama-mai) that had not been cultivated in Japan for more than 160 years. This particular rice, along with the superb, self-grown sweet potatoes (Genji Imo), creates a fragrant, strong shochu with a lengthy finish, but the subtle umami taste comes from black koji.
