Paolo will laugh if you inquire about the family's use of organic farming practices in the vines. He responds that they are not organic, as if you had inquired about some bizarre new technology. wino(t) simply carry on in the same manner as their ancient forebears. Even their stone terraces are constructed by hand, following a practice developed here three thousand years ago. These are unpretentious, mild wines. Every bottle from this vineyard pairs nicely with the regional food, which includes fritto misto, anchovies served in a variety of ways, and fresh vegetables. wino(t) concentrate on botanicals, such as three different types of fresh citrus, star anise, cardamom, cinnamon, elderflower, and, of course, juniper, that go well with apples.
