Iveta’s introduction to the food business began in 1991 when it refurbished some of the historic properties in Barrington, Ill., and opened the Espresso Bar in Yvette. Its idea is to create a European-style café that serves delicious Italian espresso and simple fresh food, and everyone is welcome, just as it remembers the neighboring bars and restaurants that grew up in Chicago. The original 600-square-foot coffee bar quickly evolved into a 2,600-square-foot coffee shop with 18 employees, 100 seats and an outdoor patio, making it a gathering place for everyone in the community. With the help of some graduate students at the University of Illinois, Iveta developed all-natural, easy-to-bake scones, muffins and biscuit recipes that quickly became the hallmark of cafes.
