The founders of Salumi Chicago resigned their day jobs and flew to Parma, Italy, the birthplace of prosciutto, in the hopes of learning from the best salumiere in the world. They were fortunate enough to be able to personally study the ins and outs of the well guarded secrets of Italian salumi. They introduce another level of Italian quality meats to the United States by utilizing superior quality spices, meats, and curing processes rooted in the old world. They were introduced to Moesle Meat Company, a Chicago-based entrepreneur. A cooperation offered them both with an intriguing potential in terms of logistics. With improved sourcing, they'll be able to expand their present offers and get back to doing what they love. They came together to become Salumi Chicago.
