All of Monterey's Tasty Olive Bar's olive oil and balsam are natural, preservative-free, and are derived from plants. All of their olive oil is extra virgin and cold pressed, all made in small batches and handmade. The fruit is harvested 2-4 hours before being crushed to maintain the health benefits and antioxidants that the fruit loses after harvest. More than 36 varieties of balm are available for sampling in their store, from 7-18 years old, gradually using the traditional Solera method. Choose from over 20 fused and unripe olive oils from around the world. Monterey's Tasty Olive Bars blended olive oil is imported from two factories in the northern and southern hemispheres, and their balms are imported from Italy. DAGs measure the ratio of two forms of glycerol: 1,2 and 1,3, which represent the quality of the fruit, the age of the processing and oil. The closer to 100%, the healthier and fresher.
