Coals Pizza is honored to be a member of the Norwalk neighborhood and to be acknowledged as a significant employer in the city. The Coals Pizza concept was first developed in the Bronx, New York, but over time it spread to local communities that reflected the lives of its founders. While Bill Etzel, the head chef and creator of Coals, started the restaurant in his hometown, it later built a location there in Portland, Maine, where Etzel also has a vacation house and a large family. Nick Restaino, his business partner, was anxious to introduce his Norwalk neighbors to the creative and delectable food at embers. While originally from the Bronx, Restaino and his wife Blanca relocated to Norwalk some 15 years ago and have since been deeply ingrained in the community.
