Aleppo'S Kitchen yearned for a neighborhood where people gathered around a table and enjoyed wonderful food, but Anaheim lacked genuine and seasonal Mediterranean food. They made the room and the food they needed on their own. Aleppo's Kitchen's first location was a secret backdoor in a modest structure with no fixed address. Every day, they spoke for hours on the phone with their grandma in their home country about cooking methods and recipes. Aleppo'S Kitchen sought to replicate Syrian cuisine by cooking it themselves. They created a restaurant by hand with the help of friends and family that felt Mediterranean in every aspect, from the Aleppo Citadel murals to the menu's abundance of warm spices and vibrant veggies.
